The anchovies, fished in the spring-summer period by the so-called “lampare”, are immediately processed according to the ancient tradition of the Cetara fishermen and placed inside wooden barrels for a slow maturation.

They are preserved in a very delicate extra virgin olive oil: an added value that gives intense aromas and flavors to a product that is called “Sea Ham” precisely because of the delicacy that distinguishes it.
