Medium-aged Pecorino, produced following an ancient recipe of the Dairy, which has remained unchanged over the years. The paste is homogeneous, white, compact and with an inviting taste; the use of vegetable rennet makes it suitable for those who follow a vegetarian diet. During the maturation process, the surface of the cheese is treated with extra virgin olive oil, which in addition to protecting the product, gives the crust its natural browning.
