Dried sourdough yeast from organic Farro in powder form. The sourdough yeasts are obtained through a 50-day fermentation, before being dried and packaged. The freeze-dried dried sourdough yeast contains a very small percentage of dry yeast, which serves as a starter, to get it going. The result, in leavening, will be a lactic fermentation (mother) for the majority of microorganisms, and a small percentage of them, of the acetic type.
